Worked example: €2.40 cocktail
With a €2.40 ingredient cost and a 20% target pour cost, the suggested selling price is €12. If you charge €11, pour cost rises to 21.8% and gross profit is €8.60. At €13, pour cost falls to 18.5% and gross profit rises to €10.60.
How the calculation works
Suggested selling price = drink cost ÷ target pour cost. A 20% target is entered as 0.20 in the formula. Actual pour cost is drink cost ÷ selling price × 100. Gross profit is selling price minus ingredient cost.
Gross profit is not net profit
These calculations only account for the ingredient cost you enter. They do not automatically deduct VAT, wages, rent, utilities, card fees, insurance, breakage or other operating expenses.
